The latest can release from our Propagator R&D Brewhouse in Venice is Kookie Monster, a decadent double milk stout brewed with vanilla beans, cocoa nibs, and brown sugar. Our homage to Santa’s favorite midnight snack, it packs the flavors of a fresh, gooey chocolate chip cookie into a delectably smooth and rich stout brewed with oats and milk sugar.

When thinking about the perfect Propagator Series limited can release to finish the year off at The Propagator, we were drawn to the classic flavors of the chocolate chip cookie, one of the culinary world’s simple yet perfect creations.
We started with our base milk stout and added even more roasted chocolate malts from Simpsons in the UK, as well as Special B malt from Dingemans in Belgium, to create a rich, chocolate and caramel-toffee malt profile. We bumped the ABV up to 8% with more malt and additions of molasses-heavy dark brown sugar for a full-bodied and decadent profile. As with all milk stouts, we gave it an addition of milk sugar in the kettle for extra body and sweetness.
Once we had our new base stout worked out, we sourced Madagascar vanilla beans and cocoa nibs from Ghana, which we conditioned the finished stout on to infuse more decadent chocolate and vanilla flavors before packaging. The resulting beer is like drinking a chocolate chip cookie, perfect for sipping on a cold winter night, or for leaving out for Santa if you’re feeling extra generous this year. Cheers to 2021!
