Our flagship beer brewed to double strength. Immense toffee, vanilla, coconut and caramel malt married with American oak aromas emerge. The first sip develops with sugary caramel, molasses and vanilla, finishing with English toffee and toasted coconut. A beer to be reckoned with and perfect for sharing.
Wild Ale Fermented With White Wine Grapes
ABV: 9.1%
Feral Vinifera is our foray into a new and exciting adventure in the Santa Ynez Valley, that expresses our collaborative efforts with local grape growers and winemakers. Its journey begins with the sourcing and pressing of grapes from David Walker’s vineyard, co-fermenting the juice with a wheat-based wort, inoculating with proprietary wild yeast and bacteria, and allowing for a long fermentation and maturation in French Oak barrels. We have carefully fermented, matured and blended this beer with the collaboration of our friend, Andrew Murray, proprietor/winemaker at Andrew Murray Vineyards. The resulting cuvee; a partnership of Sauvignon Blanc, Chenin Blanc and Muscat grapes co-fermented with wheat based wort-bends the mind and senses. Pineapple, mango, guava mingle with Meyer lemon and gooseberry. A funky savory yeast bouquet lays down a firm foundation, fruity esters and tart acidity lend body and structure. Finishing with a flinty minerality, woody tannins and vinous perfume.

Barley Wine
ABV: 14% // IBU: 80 // 26 SRM
Good Foot was created as the hoppy sidekick to Stickee Monkee; designed with a massive hop charge in the kettle to add more hop character for blending. However, barrels have a way of mellowing all things and bitterness is very often lost in the aging process, what was once a hop bomb has mellowed into a balanced and complex barley wine. After it warms, the hops being to peek through.

Blended Beer
Hat Trick is a blend of Parabola (Imperial Stout aged in bourbon barrels) and SLOambic (Sour Opal fermented with Ollie berries, aged in American Oak barrels). This is a beer of contrasts! The aroma of bourbon, vanilla, coconut, tobacco and leather, jockey with tart berry notes. Flavors of malt, coffee, bittersweet chocolate, mingle with berries, tart acidity, a firm malt body, then punctuated by bitterness. The flavors and aroma linger on the palate for some time. This is a full-bodied blend of both our spirit barrel and wild beer barrel programs.
Blending strong ale
ABV: 10% // IBU: 46 // 61 SRM
Hydra Cuveé is a blend of four different beers—two barrel-aged beers, a robust imperial porter and a black rye IPA. In keeping with Greek mythology, the Hydra represents three distinct parts—the Lion, the Bear (both from Firestone Walker’s insignia) and the Flying Dog.
The imperial porter was brewed on March 25, 2014 and was blended with two barrel-aged beers and a black rye IPA. Expect the porter to be rich and chewy with a lot of caramel and chocolate malts alongside oat flakes and a mellow stone fruit hop profile.
Flying Dog’s Matt Brophy and Firestone Walker’s Matt Brynildson picked the barrel-aged beers from Firestone Walker’s Barrelworks program.
Saison
ABV: 5.9%
Our first 2013 blend from masterblender Jim Crooks! Lil' Opal is a cunning blend of two-year-old American oak and eight-month-old French oak saisons. Both go through a secondary fermentation and maturation in barrels. This traditional Belgian farmhouse saison has notes of citrus and tropical fruit, a smooth mouthfeel, and tangy crisp finish. Round this all out with a little earthy funk and we have one refreshingly complex offering.

Brownywine
ABV: 13.6% // IBU: 32 // 64.5SRM (Dark Rum)
A tribute to 40 years of inspiration and innovation. English Brown malt, drum roasted Caramel malt, Chocolate malt and a healthy dose of brown sugar, together with West Coast American hops created a luscious Barley Wine class Brown Ale. Loads of rich, silky cocoa dusted malt character with a sturdy yet elegant balance on hop spice and boozy barrel accents. Aged seven months in Rum, Brandy and Bourbon barrels and bottled for the Maltose Falcons 40th Anniversary.
German Marzen
ABV: 5.0% // IBU: 24 // 12 SRM
Our twist on the German Märzen bier, we give you a Paso Märzen. Traditional imported malts offer subtle honey-like aromas with hints of Noble hop spice. The stars of this brew are the imported Pilsner and Vienna malts that offer malty sweetness that carry through to the end. German Hallertau hops add rich Noble hop character to balance this exceptional Marzen. This beer is 100% stainless steel and gets the name Oaktoberfest as an ode to our hometown, Paso Robles, Spanish for "Pass of The Oaks". True to Oktoberfest custom, this beer makes its debut in time for fall to celebrate the age-old German tradition.
Barrel Age Blend

What’s better than drinking with friends? Brewing with friends, so each year Brewmaster Matt Brynildson collaborates on a special beer, inspired by the Invitational Beer Fest. This year’s collaboration with 3 Floyd’s has deep roots in Chicagoland where Matt Brynildson & Nick Floyd first home-brewed together back in the early days of craft beer. The result of a friendship started long ago, Ol’ Leghorn is more than just a beer, it’s a time-machine. Enjoy.
Barrel Aged Imperial Stout
Infused with Coffee
ABV: 13% // IBU: 82 // Espresso Black
Parabajava is an ongoing series of infusing some of the best coffees in the world in to Parabola, our decadent Russian Imperial Stout. This year, we collaborated with local Templeton coffee roaster Dark Nectar to find the perfect coffee to complement the rich dark chocolate and bourbon character of Parabola. After tasting single-origin coffees from around the world, we found what we were looking for. Their Ugandan single origin roast adds subtle nutty and fruity accents that round out the flavor profile of Parabajava, resulting in an overall profile reminiscent of a rich, espresso-infused batch of fudge brownies. The barrels selected for the final blend were from several batches in the summer of 2015, averaging just over a year in age at blending. We then cold-infused freshly roasted and coffee direct from Dark Nectar. We recommend that you drink Parabajava fresh to enjoy the coffee character at its peak.

Imperial Buckwheat Stout

This bold and deliciously complex beer is an Imperial Buckwheat Stout aged in Tequila barrels for 13 months. Only a collection of pioneering, well seasoned, extensively traveled and passionate pub owners could come up with such a notion. Our carefully calculated collision of flavors was laid down in fresh Tequila barrels wrangled over our southern boarder. We simply call this beer "PNC" in honor of it's collaborating creators – the gothic symphony of flavors will speak for themselves.
Cross Atlantic Wild Ale
ABV: 5%
The Rainbow Project paired seven UK and US breweries with one of seven colors of the rainbow, creating the theme of the brew. We drew violet. What followed was left to the imaginative and creative spirt among the collaborators. Violet Underground represents a partnership between The Wild Beer Co. and Firestone Walker Brewing Co. A cuvée was born from Somerset Wild, a newly minted Golden and Sunrise Raspberry ale, and Barrelwork’s blending warhouse, Cowbell. Proprietary yeast from both sides of the Atlantic, fresh local California fruit and French candied violet petals went into the cauldron. The resulting potion is bursting with ripe fresh fruit, a hint of violet petals and anchored by a funky yeast foundation. A quenching acidity and lively carbonation rounds out the collaboration. A santé!

Blended Strong Ale
ABV: 10.3% // IBU: 44 // 32 SRM
A blend of Wookey Jack and un-oaked Double DBA, Winter Wookey brings dark chocolate covered dried cherry, candied apple, orange zest and toffee flavors together in a complex, warming blend. Deceivingly drinkable for its size, Winter Wookey balances a big, malty body with a complementary spectrum of hop aroma and bitterness.

The Finished Piece
As a finished beer- Eleven is far more structured and refined than any previous blend. We bottled this beer a full month before release to allow it to integrate fully. It is not a beer of broad strokes or exclamation points, but a beer of subtle nuances and secrets. It best enjoyed in a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. We kept the carbonation very low to compliment Eleven’s smooth texture. If left in a cool dark place, I suspect that this beer will age well.

As a finished beer, XII is in some ways more aggressive than any previous blend, but it maintains a great deal of depth and complexity. Everyone seems to get something different when they taste this beer- mocha, tobacco, toasted almonds, olallieberries… I leave the interpretation to you. It is best enjoyed in a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. The Finished Piece
As a finished beer, 13 is more sublime then last year’s blend. It is all about the subtleties and quiet tones. It has deep dark chocolate notes and is accented with dried fruit and licorice. There are hints of molasses and even a little cherry in the middle complimenting the vanilla and coconut notes brought in by the oak. These barrel qualities are very well integrated and meld well with the roast malt and caramel undertones. It is best enjoyed in a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. If left in a cool dark place, I suspect that this beer will age well. It was a pleasure in the making and I truly hope you enjoy our fourth oak-aged blend!

As a finished beer, 14 is a brimming with amazing flavors and textures. DDBA leads the blend lending American toasted oak, English caramel toffee and light leather nuances. Newcomer, Sticky Monkey, folds in the taste of brown sugar, molasses, cinnamon, ginger and ripe figs. Parabola brings the familiar flavors of bitter dark chocolate and cherry pit. Velvet Merkin carries silky bourbon soaked chocolate cake goodness to the party while a touch of Black Xantus teases coffee and tobacco. Last, but not least, Good Foot brings the hops… hints of citrus zest and tangerine, which adds a pop to the aroma and nice finish to this big, sexy brew. 14 is best enjoyed in a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. If left in a cool dark place, I suspect this beer will age well. It was an absolute pleasure making it and I truly hope you enjoy our fifth oak-aged blend! The journey continues.

The Finished Piece
Looking at a blend of 8 beers on paper at first looks chaotic and potentially disjointed; however, a closer look reveals and interesting theme: 76% Barley Wine style beers, 19% Stout and 5% Imperial IPA. XV introduces our new blonde barley wine Helldorado with flavors of lavender honey liqueur. The well established DDBA delivers its signature American toasted oak, English caramel toffee and light leather nuances. 2010 vintage Sticky Monkey folds in brown sugar, maple, cinnamon, ginger and ripe figs. Parabola brings the familiar flavors of roasted dark coco, and chocolate covered cherries. Velvet Merkin carries silky milk chocolate, toasted coconut and creamy textures. Good Foot and Bravo add assertive barley wine warmth and lush barrel derived vanilla bean notes. The game changer this year is the addition of Double Jack to the blend. At just 5% its massive dry hop character brings citrus zest, tangerine and mango aromas making this a completely new beer.
The beer is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XV is best enjoyed poured carefully into a half-filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. As the beer sits and breathes in the glass, a richer, orange zested, chocolate dusted, vanilla custard character is reveled, so take your time. If you wait to open your bottle later, store it in a cool dark place. I suspect that this beer will age well and change favorably for years to come. The Finished Piece
As a finished beer, XVI takes us back to some of the wonderful dark notes (the black keys) that I remember from the original 10 blending. XVI is 42% stout with Velvet Merkin, Parabola and “PNC” working together as three roasty toasty friends that create rich cacao, chocolate and mocha flavors together. “PNC” also introduces tequila barrels into our blend for the first time and brings some interesting south of the boarder spirit notes to the mix – a welcome twist. Helldorado, with flavors of lavender honey liqueur was again a favorite of the winemakers and made the cut adding some flowery notes. DDBA continues to deliver its signature American toasted oak, English caramel toffee and light leather nuances. DDBA was also release on its own in 2012 and is now established as a solid annual brew. Stickee Monkee is fast becoming one of our favorite pieces with its rich maple syrup, spicy cinnamon, and ripe fig flavors which has developed into a bolder cousin of perennial blend component Bravo who carries barrel character and bourbon notes like no other. The additional twist this year is Wookey Jack, Black Rye IPA with its wily citrusy hop notes and spicy rye backbone. The finished blend is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVI is best enjoyed poured carefully into a half filled brandy snifter or red wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. It takes a while, but as this beer sits and breathes in the glass, more rich dusty chocolate, stone fruit and crème brulee character is reveled as the rich spirit characters fade - so take your time. If you wait to open your bottle later, store it in a cool dark place. I suspect that this beer will age well and change favorably for years to come. It was an absolute pleasure in the making and I truly hope you enjoy our Seventh oak-aged blend! The journey continues and its just as fun and exciting now as it was back in 1996. The Finished Piece
As a finished beer, XVII is dark, rich and complex. The lead beers of the blend are Bravo, a lean and oak-forward imperial brown ale and Stickee Monkee, a huge brown sugar infused barley wine. These beers are beautiful on their own but together they bring rich molasses drenched oak flavors and cinnamon glazed almond aromas lifted by high alcohol. In the middle of the blend are our two favorite stouts, Parabola and Velvet Merkin, working in concert to provide a dusty cocoa mocha aroma and bitter dark chocolate flavors. Somehow together in this blend I am reminded of Bourbon-soaked chocolate chip cookie dough! Double DBA makes the blend again this year, bringing its signature vanilla-infused crème brulée flavor. Helldorado, our blonde barley wine, helps to bring balance with its honey notes and light leather nuances. Like last year, a dash of Wookey Jack made the cut bringing with it some fresh hop notes derived from bold Citra and Amarillo creating even more interesting complexity. All together I find XVII to be full of soft chocolate and warm spice perfectly balanced by toasted coconut, bourbon barrel notes and smooth creamy malt mellowness. The finished blend is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVII is best enjoyed poured carefully into a half-filled brandy snifter or red wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. It takes a while, but as this beer sits and breathes in the glass, more rich chocolate and spice character is revealed as the ethereal spirit characters dissipate - so take your time. If you wait to open your bottle later, store it in a cool dark place. I suspect that this beer will age well and change favorably for years to come. It was an absolute pleasure in the making and I truly hope you enjoy our eighth oak-aged blend.
