The Taproom specializes in brewhouse bistro cooking with an emphasis on local flavor. The Taproom is ultimately an extension of the Firestone Walker brewing philosophy—the finest and freshest ingredients, prepared with care and presented from a distinctively regional perspective.

The Bar

Our Paso Robles restaurant features 16 beers on draft as well as a collection of library beers from past vintage releases. Our beers are all brewed next door at the Firestone Walker Brewing Company providing some of the freshest beers available.

The Paso Taproom wine list is composed exclusively of Central Coast wines. Brewmaster Matt Brynildson has developed friendships with numerous Paso Robles winemakers whom he has conscripted into his annual blending team for crafting our acclaimed anniversary ales. Matt’s team has a prominent presence on the wine list.

the design
Designed and built by local craftsmen, The Paso Taproom features a spacious modern ambiance that echoes the brewery environment, including brushed steel, corrugated metal, rustic wood and copper appointments. Seating includes booths and tables, as well as long-table seating, whereby patrons sit side-by-side for a community dining experience.
